Today’s recipe is by Gordon Ramsay. His Pork Sliders with Barbecue Sauce is found in his book, Home Cooking. What I have noticed with world class chefs, especially those with Michelin stars, is that they use a lot of ingredients that I have never heard of or are hard to come by. However, the most unusual ingredient in this recipe was ground pork. I did not find it at my local grocery, so I used ground pork sausage instead. I stuck with the classic pairing of fries with these pork sliders. This delicious recipe will serve up to 4 people, so feel free to have a little dinner party with some friends. I have no doubt these sliders will be a requested recipe!

  • For the pork patties
  • Olive oil

  • 4 strips of bacon, finely diced

  • 1 pound of ground pork (I used ground pork sausage)

  • 1 shallots diced

  • 1 tsp Paprika

  • Salt and Pepper

  • For the BBQ sauce
  • 1 small onion, finely diced

  • 2-3 garlic cloves, minced (I used 4, we love garlic!)

  • 1 Tbsp brown sugar

  • 1 tsp Paprika

  • 1 Tbsp cider vinegar (I used apple cider vinegar)

  • 2 tsp Worcestershire sauce

  • 6 Tbsp Ketchup

  • The rest
  • Burger buns (If possible use fresh buns to avoid dry texture)

  • Your choice of lettuce (I used romaine)

  • Your choice of cheese (I used Muenster)

  • Tomato slices


  • First, make the BBQ sauce because it has to cool:
    • Put the onion, garlic and brown sugar into a small pot.
    • Cook for a couple minutes then add paprika. 
    • Cook onions until it becomes caramelized, about 8 minutes. 
    • Add in the vinegar, cook for 1-2 minutes  
    • Add in Worcestershire sauce and ketchup. 
    • Stir until completely combined and has a “dropping” consistency. 
  • Cook your bacon until its just about crispy, then add in your diced shallots. When the bacon is crispy and the shallots are softened, add in paprika and stir. Drain excess oil and let cool.
  • Make the patty mixture. Once bacon mixture has cooled, add it to a medium size bowl and stir in the ground pork. If you are using ground pork for your mixture, then use salt and pepper.

    If not, and you are using what I could find, then DO NOT salt/pepper the mixture. I found it’s easier to use your hands to do this to make sure it’s evenly combined. 
  • Form the patties. Using your hands form golf size like balls then flatten them. 
  • Cook the patties. Oil a large frying pan and cook patties for 2 minutes on each side. Once patties are cooked, then place on your selection of cheese and take off the heat. 
  • Assemble your slider wit the cooled BBQ sauce and enjoy~

Tips and tricks

  • • Remember, if you use ground pork sausage, do not season with salt and pepper. It will make the mixture too salty.
  • • To protect your bun from getting soggy, slightly toast the bun in a frying pan. I like to use a touch of olive oil to get in a little flavor as well. 
  • • If you like BBQ sauce, then put it on the top and bottom of the buns, yum!
